| Whole Dry Milk |
The dry whole milk (DWM) shall be U.S. Extra Grade, spray process and not more than 60 days old on the date of shipment. The DWM shall be subject to penicillin and coliform test to be performed by Agricultural Marketing Service (AMS) at the time of grading. The penicillin test must be negative, and coliform count shall be not more than 10 per gram.
The dry whole milk shall meet the following specifications:
(1) Milk fat Not less than 26.0% (2) Moisture Not more than 4.5% (as determined by weight of moisture on a milk solids not fat basis). (3) Bacterial Estimate Not more than 30,000 per gram standard plate count. (4) Scorched Particles Not more than 15.0 mg. (DISC B.) 5) Solubility Index Not more than 1.0 ml.
The dry whole milk shall be white or light cream in color, free from lumps that do not break up under slight pressure, and practically free from visible dark particles.
Reconstituted U.S. Extra Grade dry whole milk shall be sweet, pleasing and desirable. It may possess a slight feed flavor and a definite cooked flavor. It shall be free form undesirable flavors. The reconstituted dry whole milk shall be free from graininess.
PACKAGING
The dry whole milk shall be packaged in four or five pound foil packages, four or five pound metal cans, or 25 kilogram multi wall paper bags.
